Summary
Belonging to the flavonoids, isoflavones comprise naturally occurring, secondary plant metabolites that are mainly found within the family of Fabaceae. Soybeans are one of the richest sources of isoflavones in normal food. Actually, there are several foods derived or based on soybeans such as soy milk, tofu and tempeh. Furthermore the consumption and use of soybeans (texturized soy protein, concentrated soy protein and soy protein isolate) as additives by the food industry is increasing every year. The main isoflavones found in soybeans are genistein (4’,5,7-trihidroxyisoflavone), daidzein (4’,7-dihidroxyisoflavone), glycitein (4’,7-dihidroxy-6-metoxi-isoflavone) and their respective acetyl, malonyl and aglycone forms. Only aglycones are considered to be active metabolites and have been reported beneficial effects on the physiological function in humans. The soybean isoflavones have been one of the most investigated phytochemicals due to their ability to reduce the incidence of some types of cancer, as well as relieve climacteric symptoms in postmenopausal women. Furthermore soy protein containing isoflavones have several beneficial effects on cardiovascular health.
Microencapsulated delivery system, such as emulsion-based system, complex-coacervates, solid lipid nanoparticles and biopolimeric gelled microsphere, have the potential to protect bioactives, mask taste of undesirable components and release them upon ingestion. An important aspect of the delivery of bioactives is their bioavailability on ingestion. What is importance intestinal flora plays key roles in the metabolism and bioavailability of isoflavones. Microencapsulation of a bioactive mixture like isoflavones would affect intestinal transit times but not compromise the bioavailability of the individual agents.
