Summary
The raw and processed fruits and vegetables are a rich source of vitamins, minerals, dietary fiber, as well as biologically active ingredients, e.g. antioxidants. In addition, they contain valuable flavonoids, carotenoids, phytoestrogens and water.
The aim of this article was to show the influence of beneficial properties of chemical substances contained in fresh and processed fruits and vegetables on the human body. It was presented their role in the prevention of lifestyle diseases such as cancer, diabetes, cardiovascular disease and obesity. Scientific research shows that one of the ways to reduce the risk of many chronic diet-related diseases is to increase the consumption of raw and processed fruit and vegetables, mainly juices. This is due to the fact that the juices have the most similar composition to the raw material. For proper nutrition, in addition to a well balanced diet, the quality and composition of meals are important. In response to the needs and expectations of consumers, a new types of products appear in the market, including a new type of juices obtained from fruit and vegetables, which may be of snacks between meals.
