Analiza porównawcza żywienia dzieci w przedszkolach w systemie tradycyjnym i cateringowym

Summary
Introduction. Preschool age is a period in which a young organism develops very quickly, and all the dietary mistakes made at that time may have negative effects, observed not only in childhood but also in adulthood. Kindergartens are obliged to ensure their charges nutrition, which properly fulfill the demand for energy and nutrients. Preparing meals is done in a traditional system (own kitchen) or with catering. In this article an attempt to compare the accuracy of nutrition has been taken, conducted on the basis of the above mentioned food production systems based on the analysis of menus from two kindergartens.
Aim. The main objective of this study was evaluate and compare the menus in the kindergartens providing nutrition in a traditional and catering systems.
Material and methods. Materials were from ten menus were two Warsaw kindergartens, one of which was supplies with all the food by the catering company, while the other used a traditional system. Diets were analyzed by Bielinska’s test modified by Kulesza and compared to the standard diet.
Results. The study proved a significant deviations the norm in kindergartens diets for energy, protein, carbohydrates, iron, and in particular for vitamin A.
Conclusions. The main conclusion of the study is the need to improve the pre-school menus in order to minimize the negative effects of poor nutrition in the future children’s lives.
