Summary
This paper presents the pro-health properties of the rapeseed oil. Introduction to the agricultural practice of the varieties of rape twice improved caused the rapeseed oil to be included to the most precious edible fats. Twice improved variations characterize with the residual content of erucic acid in the seed oil (less than 2%) and low glucosinolate content in the nibs (less than 30 μM/g of non-fat dry mass of seeds). The advantage of the rapeseed oil is the high content of essential fatty acids (NNKT) and the perfect from the point of view relation of omega acids-6:omega acids-3, which is 2:1. Rapeseed oil due to a similar composition of fatty acids to olive oil is called the “midnight oil”. Other important elements associated with the rapeseed oil are: tocopherols, sterols, phenol compounds, carotenoids, phospholipids. Studies have shown that regular consumption of rapeseed oil influences the proper development of brain, nervous system and eye retina. Rapeseed oil is used in the prevention and treatment of cardiovascular diseases; ischemic heart disease and stroke, hypertension, cancers: breast, prostate and colon. Consumption of rapeseed oil influences positively the lipid system lowering the concentration of the total cholesterol and LDL fraction, without affecting the HDL cholesterol concentration. Nutritionists recommend the use of rapeseed oil in the daily diet, and it is also recommended to pregnant women and children from six months of age. Rapeseed oil may be used to fry, for salads, vegetable salads, soups and it is a perfect ingredient of homemade cosmetics.
