Summary
Functional foods can be both conventional food or biotechnologically modified food. But raw materials for its production are often obtained from special animal breeding or special crops, conducted under specific environmental conditions. In recent years there has been significant progress in the study on functional food. Phytochemical, pharmacological, toxicological and biochemical tests were conducted in order to increase the number of species of crop plants as well as wild plants used as a component in the process of functional food production. In this way a new chemical structure and pharmacological properties of active substances (that affect the metabolism and biological processes occurring in the body) were determined. This fact is of particular importance because nowadays food production process is overloaded with components containing large amounts of chemical substances, including antibiotics – that have an adverse effects on health.
