Summary
Amaranthus originates from America, but is now widespread on all continents, where it is known under different names and is used for different purposes. This genus comes in many forms, which are used as food, animal feed, ornamental plants or herbs. The chemical composition of amaranth seeds is very good for health. Seeds of this plant contain from 16 to 20% of proteins characterized by very good biological composition, including all essential exogenous amino acids. In addition, amaranth seeds contain from 3 to 9% of fat, including 5-8% of squalene. Amaranth seeds and leaves are rich in bioelements, such as calcium, phosphorus, iron, cobalt, iodine and antioxidants. Consequently, amaranth demonstrates a broad range of therapeutic action, e.g. it has a favourable effect on the heart and cardiovascular system, is beneficial for the nervous system, enhances the immune system, regulates the level of bad (LDL) cholesterol, preventing arteriosclerosis, retards the progress of tuberculosis or peptic ulcers. Amaranthus reveals antifungal and anti-allergic effects. Additionally, amaranth seeds are used for production of antiseptic medications and preparations as well as medicines for treatment of throat and oral cavity inflammations. Amaranth seeds are a good component in a diet for patients suffering from heart condition or coeliac disease, helping them to recover more quickly. Seeds of this plant are also broadly used in function food production and in the cosmetics industry.
