Summary
Garlic (Allium sativum L.) has been used medicinally in ancient and modern times. The reviewed the literature about their used as medicinales and as an antimicrobial agents. Louis Pasteur in 1858 was the first to describe the antibacterial activity of garlic and onion juces. Garlic and its components was found to exhibit antibacterial activity against a wide range of Gram-positive and Gram-negative bacteria, including multiantibiotic resistans some strains, antifungal avtivity on various fungal pathogens but particularly against Candida strains, antiviral and antiparasitic activity, including intestinal protozoan such as Giardia lamblia and Entamoeba hisolytica. Analysis of steam distillations of crushed garlic cloves showed a variety of allyl sulfides, which are responsible for the remarkable antibacterial activity of crushed garlic. The most important components of garlic e.g. alliin (non active), allicin, ajoen, and essential oil demonstrated bacteriostatic and fungicidal activity.
