Summary
Problems associated with the consequences of incorrect nutrition may be divided into several groups. These are medical and social issues. Many of the problems are analysed by specialists in the field of epidemiology. Many diseases classified into the civilisation diseases develop as a result of incorrect nutrition. Deficit and metabolic diseases, as well as poisonings, may also appear on this background. Adequate nutrition is the most important environmental factor favourably affecting the human state of health. Incorrect nutrition is due to many factors, and the direct or indirect causes may a the consequence of the development of many diseases, mainly obesity. Health risk associated with food may be the effect of either the consumption of food products of improper qualitative or quantitative composition, or the consumption of food containing prohibited amounts of contaminants. Health risk connected with incorrect nutrition may be due to the quantitative deficiency leading to the energetic deficit of the organism, and also qualitative deficit, which may cause anaemia, endemic goitre, sub-clinical avitaminosis, or lipid metabolism disorders. In the prophylaxis and therapy of the effects of incorrect nutrition, plant components may play an important role, containing – apart from primary metabolites (hydrocarbons, proteins, fats) – also secondary metabolites classified into so-called natural non-nutritive substances. The consequences of incorrect nutrition often lead to disability, with its health, social and occupational effects.
