Summary
About 300 Allium species of Liliaceae have been in Europe identified. One of the most popular species is the common garlic – Allium sativum L., mainly used as a spice, and also as a valuable medicine. All the species of Alium genus emit a specific odour of desintegration products of sulphure compounds after their tissues were damaged. The main garlic substance – the alliine desintegrates, when influenced by the enzyme alliinase to allicine, ajoen, vinyldithiin and polysulphides. The metabolites of the main garlic consti-tuents have a relevant role in the therapy. A review of the results of chemical, pharmacological and clinical research on garlic preparates, obtained till now, have been presented. This plant is one of most thoroughtly studied herbal raw materials after the second world war. Its importance in the prophylaxis and selftreatment, especially by geriatric disorders, is by the existing research works evidenced.
