Summary
Mycotoxins are the toxic metabolites of moulds from the species of Aspergillus, Penicillum and Fusarium. They could accure on many plant products and in different environmental conditions. Mycotoxins have various toxic activities. Because they are resistant to temperature, their presence in the food and fodder could be dangerous for the health of people and animals. The problem of contamination of cereals with fusaria toxins is very important for health and economic reasons. The proposal of maximal contamination levels for Fusarium toxins was elaborated in United Europe. The modern analytical methods can be used for the early detection and identification of each mycotoxin group as a source of food and fooder contamination.
