Summary
This review describes the knowledge on the influence of soy and soy isoflavones consumption on thyroid gland structure and function. Based on animal model experiments and several human studies there were shown effects of soy on the thyroid structure and thyroid hormone production, particularly in the absence of iodine: soy has stimulated thyroid hyperplasia and hypothyroidism; on the other hand slightly elevated thyroxine and thyroid stimulating hormone (TSH) serum levels and no serious thyroid structure changes were observed in iodine- replete soy consumers. Although in vitro data proved that soy isoflavones inactivated thyroid peroxidase, they caused no serious thyroid disorders. We present revealed mechanisms of soy action in the thyroid and possible harmful results of soy consumption for people with iodine-deficient diet or exposed to other risk factors. We noticed there were no medical data about possible effects of soy consumption by adults suffering from thyroid diseases. In our opinion it is particularly important because soy products are heavily marked to women for relief of menopausal symptoms at present.
