Streszczenie
The purpose of this research was to analyse the dietary preferences of the elderly living in a nursing home environment.
The questionnaire based research was carried out within the settings of nursing homes in Poznań, Słupsk, Śrem and Środa Wielkopolska. The results obtained were analysed by means of the computer programme SPSS 6.1 for Windows.
The analysed factors were gender, age, and place of inhabitancy, education and duration of stay in the nursing home.
The results obtained indicate that the prior place of inhabitancy of the elderly was the most influential factor determining nutritional preferences. There exists definitive differentiation not only at the macro level – the region, but also at the micro level – within a given region.
The practical implication of this research is that of its applicability to create the menus for the elderly living in the nursing/rest homes. It can be concluded that the individual preferences in diet and nutrition should be reflected in the menus.
