Summary
Asparagus belongs to the family Asteraceae. This vegetable is very popular in China, Peru, the United States, Germany and Spain. Asparagus is a vegetable, characterized by a low energy value, while ensuring a high content of nutrients, including biologically active compounds. In addition to vitamins (A, C, E, carotenes – as provitamine A and B group) asparagus spears also contains easily digestible proteins, carbohydrates (including neoinulin type fructan with a major degree of polymerization – DP ≥ 5), minerals (K, P, J, Ca, Mg, Fe, Zn). Among all the bioactive compounds present in asparagus spears, important role have steroidal saponins (including a significant amount of protodioscin), hydroxycinnamic acids (including a significant amount of ferulic acid), flavonoids (including a significant amount of rutine), phytosterols (including a significant amount of β-sitosterol) with antioxidant activities. Consumption of this vegetables or supplemented food products (with extracts from the commercial asparagus spears processingby-products) may therefore help treat digestive disorders, cardiovascular diseases and slow the aging process.
